I was gonna stuff these with quinoa but I ran out and used oats instead! Came out yummy!! 1 cup cooked steel cut oats
2 acorn squash, halved and seeded
1/2 cup dried cranberries
1/4 cup maple syrup
1/2 tbsp cinnamon
1 apple, diced
1 tbsp brown sugar (optional)

1⃣Brush squash with oil and put in a pan. Bake at 425 for about 35 mins.
2⃣In the meantime mix the oatmeal with rest of the ingredients.
3⃣Spoon oatmeal stuffing into squash evenly and continue to bake 10-15 mins until squash is tender.

J is feeling a bit better. Fever is gone and he’s running around but it hurts him to swallow 😢 He cries every time he tries to eat. I thought this would nice and soft for him but he couldn’t do it.
For younger babies consider omitting sugar and possibly cranberries if they are too hard.
