Red Pepper Jelly Stuffed Chicken

Made this delicious chicken using the @jammyyummy red pepper jelly I got in my @hatchery box. You can use different greens and cheese as desired.

4 deboned chicken thighs
1 bunch chopped Swiss chard
4 thick slices of Gruyere cheese
1/4 cup red pepper jelly
1⃣Take a chicken thigh and put a few leaves of chard and a slice of cheese in the middle. Fold the thigh over and close with a toothpick. Repeat for all 4 thighs.
2⃣Heat a pan with oil (I used avocado) and brown the chicken for about 2 min per side.
3⃣In an oven proof dish mix the rest of the chard with some oil. Best the chicken thighs in the chard. Bake at 375 for about 20-30 min until chicken is cooked through.
J didn’t eat anything for dinner. Very bummed. He wouldn’t even try it! Oh well. It was really yummy. I’m gonna send it for lunch to monad tomorrow!

Served with kale salad on our @ezpzfun happy mat!
