Mushrooms and Bok Choy Stirfry

It’s stirfriday! I’m obsessed with these Japanese Shimeji mushrooms lately so I wanted to make a simple meal using them.

3-4 small bunches Bok Choy, chopped
1 package Shimeji or other Asian mushrooms
2 cups bean sprouts
2 tbsp oyster or oyster flavoured sauce
1 tbsp Chinese cooking wine
1 large garlic clove, minced
2 tbsp dark sesame oil
SAUCE
2 tsp corn starch
1/4 cup water
1 tbsp veggie broth

1⃣Mix all sauce ingredients in a bowl.
2⃣Heat oil in wok and add garlic. Add Bok Choy and cook until soft.
3⃣Add mushrooms and sauce and Stirfry until sauce thickens a touch and looks shiny.
4⃣Add bean sprouts and cook until just heated.
Serve on rice 🍚

J ate about 1/2 but then he started tossing everything. 😣
