A great way to use up leftover mashed potatoes if you have them or make them from fresh.
I got this idea from savourystyle.com but I changed it a bit because I wanted to make a non deep fried version. If I made these again I would probably cook he bacon before, chop it up and mix it in with the potato. You could also make these vegetarian by just removing the bacon altogether.
2 lbs peeled potatoes
1 cup cubed cheese
2 tbsp garlic butter
1/4 cup milk
1 cup (gfree) breadcrumbs
1 package bacon
1⃣Boil potatoes, and mash with milk and butter. Add more of either if necessary. Allow to cool.
2⃣Grab a small handful of potato and flatten it in your palm. Insert a cube of cheese and make into a ball with cheese in the middle.
3⃣Roll ball in breadcrumbs and wrap with a piece of bacon closing with a tooth pick. Repeat until potatoes are done.
4⃣Bake at 400 for 20-25 mins.
Julian ate all the bacon off his but didn’t eat the potato. I was all 😱 cause I’m buddy this potato and cheese so delicious and your fave. Oh well! Ok 6 months ✔️ use low sodium bacon if you can.
