Chickpea Socca
I’m guesting this week for the #HealthyKidsCommunity and this week is “outwit the wheat”

All my dinners are gfree because of my hubby but I thought I’d post today about an awesome bread alternative. A chickpea flatbread called socca. It’s easy, selfish and can be used in a myriad of ways.

1 cup chickpea flour
1 cup + 2 tbsp water
3/4 tsp salt
1/8 tsp cumin

You will also need a broiler and an oven proof pan.

1⃣Mix all ingredients in a bowl and let sit for 2 hours.
2⃣Heat pan under broiler on him until it is very hot. Pour batter into pan and reinsert it under broiler for 10 mins.

That’s all folks! Makes one extra large flatbread! Wasn’t that easy? Gluten free doesn’t have to be hard.
