What a yummy side dish! I was originally just going to make buttered carrots and then I saw some pistachios in the cupboard. They really kicked it up a notch 👍🏼 1 bunch carrots, peeled and chopped
3 tbsp butter
2 tbsp honey or 1 tbsp brown or coconut sugar
1/4 cup coarsely ground pistachios
1/2 cup water
1⃣Melt butter in pan, add carrots, honey/sugar, pistachios and water. Cover and let simmer for 10-12 mins until carrots are tender.
2⃣Remove cover, lower heat and allow sauce to thicken and glaze about 3-5 mins. Serve.
J tasted the carrots a few times but didn’t eat much. He did eat his burger. For smaller babies cut the carrots in finger shape sticks. ✔️1 year plus if you use honey. If not then technically 6 months but 8 months might be better because nuts and sugar aren’t the best introductory food.
