Stuffed Acorn Squash

Really quick yummy meal. It was meant to be meatless but I had a ton of ground beef I needed to use. You can make it meatless easily.

2 acorn squashes, halved and deseeded
1 bunch spinach, chopped
1/2 onion, chopped
1 cup cheese, grated
1 cup ground beef (optional)
1 tbsp each paprika, garlic powder, mustard powder

1⃣Sprinkle halved squashes with the seasoning and bake cut side down at 400 for 30 mins.
2⃣Meanwhile, brown the beef in a pan (if using) add the onion and spinach and sauté until spinach is wilted.
3⃣Stuff the squash with the spinach mix and top with grated cheese. Bake again for 10 mins until cheese is melted.

I cut about 1/3 of my half of acorn squash. He didn’t eat the squash part but ate all the spinach, cheese and meat filling. He kept asking for more spinach. He also ate a bit of garlic bread and watermelon. ✔️ok 6 months.
