Mexican Spaghetti Squash

Today was my first day back to work. Didn’t think I’d get emotional but I did 😩

Ok so I wasn’t expecting J to be super in love with this but he DEVOURED it. And he used his fork by himself for 95% of the meal!! Also he had a 2.5 he nap today at my moms. What a day!

Spaghetti squash is a great dish for beginners.

1 spaghetti squash, halved and deseeded
2 tbsp Mexican salsa or seasoning
1/4 cup Mexican cheese
1/2 cup frozen corn
1/2 onion, chopped
2 tsp lime juice
1 avocado
1 hot pepper (optional)

1⃣Put squash on a baking sheet and bake at 375 for 45 mins. Remove and shred meat with a fork so it becomes “spaghetti”.
2⃣ Sauté the remaining ingredients together in a pan until soft. Add in the squash and mix well until heated through.
Put back in shells for a cute effect!

J ate the whole bowl! Ok 6 months (wouldn’t use the pepper for babies that early though)
