Indian Inspired Potato and Spinach

We served this with some yummy pan grilled tilapia!

2 lbs potatoes, cubed
3 tbsp butter or ghee
1 onion, chopped
1 clove garlic, minced
1 bunch spinach
1 tsp each turmeric, cumin seeds and mustard powder
1 tbsp ginger, minced

1⃣Heat butter in pan and add onions, garlic and ginger sauté for 3 mins.
2⃣Add potatoes and spices and sauté for another 3-4 mins.
3⃣Add 1/4 cup water, cover and stir occasionally. When potatoes are tender add spinach and allow to wilt. Serve. Add salt if you wish.

J has had a healthy appetite today. He ate HUGE lunch of leftovers and he ate his whole plate tonight plus blueberries.
