Jamaican Pigeon Peas and Rice

Yummy! I love Caribbean rice and peas 😍 2 cups rice (long grain or parboiled)
1 cup dried pigeon peas or 1 can
1 can coconut milk
2 green onions, chopped
1 clove garlic, minced
1/2 tsp ground pepper

1⃣If using dried peas soak them in 2 1/2 cups water for at least 6 hrs. Then boil in the same water for 1/2 hr. If using canned drain the liquid into a measuring cup and add water until it reaches 2 cups.
2⃣Add all ingredients (including the water from the peas) to a rice cooker and cook. If you do not have a rice cooker boil and then simmer until all water is absorbed about 20 mins.
