Baked Salmon Cakes

This was a request from my FB follower Sara.
3/4 cup cooked salmon
1 tsp lemon juice
1 cup gfree/regular breadcrumbs
1 egg
1 tsp Dijon mustard
1 tbsp chopped parsley
1/3 cup finely chopped onions
1 tsp + 1 tsp oil
1 tsp black pepper

1⃣Sauté onions in 1 tsp oil until soft
2⃣Mix salmon with lemon juice in a bowl. Add egg and mustard and mix well. Then add the rest of the ingredients.
3⃣Heat a small pan with remaining tsp of oil and quickly brown one side of cakes to make them firm just a min or so.
4⃣Bake at 450 for 10 mins.

I thought these would be up Js alley but he didn’t want any. Will trey again at dinner. ✔️ok 6 months.
