Homemade Chewy Granola Bars

I finally got around to making some granola bars. These are soft and chewy. I dislike hard granola. They have honey so they are 1 year + but you can omit and use a bit of maple syrup instead or use more dates to make it safer for 6 months. If you want to make sure it’s gfree buy gfree oats/granola.

2 cups oat granola (I used a granola mixed with cranberries and currants)
1/3 cup honey (add more if necessary)
4-5 dates pitted and chopped
1/8 tsp vanilla extract

1⃣Mix everything together really well. Add more honey if too dry. Add more granola if too sticky.
2⃣On parchment paper press into a square baking pan. Bake at 350 for 20 mins. If you want harder granola bake longer.
3⃣Allow to cool and slice!
Haven’t tried with J yet but will let you all know how he likes it. I tried it and its soooo tasty.
