This is actually breakfast from yesterday morning. It’s pretty gloomy and dark here and all my pics of this morning’s breakfast look yucky.

Monster Breakfast Sandwich

J got a deconstructed version of this. He had pieces of toasted bread, cut up egg and one slice of cut up bacon (no more because of salt) and a little scoop of ricotta. This is hubby’s gluten free version.

1 bun, toasted
3 strips of bacon
2 eggs
1/4 cup ricotta cheese

1⃣ Fry up bacon. Remove to a plate lined with paper towel to absorb oil. Drain most of the bacon grease but leave a tbsp or so.
2⃣Fry eggs in remaining grease. You can leave runny or puncture the yolk according to preference. For kids under 2 always cook egg yolk.
3⃣Assemble sandwich adding bacon, eggs, ricotta and bagel shake onto bun and enjoy!! Not the healthiest breakfast haha but sometimes you need some comfort food!

Served with fresh squeezed orange juice! ✔️technically this ok 6 months as long as there is no egg allergy in the family but I would probably wait until 9 months to give bacon due to salt.
