Pan fried Gnocchi with Peas, mushrooms and egg.
We tried morel mushrooms for the first time this week. They were alright but not my fave mushrooms! Odd cause usually I love them!
1 package gnocchi
1 bunch mushrooms
1/2 cup peas
1 egg beaten
2 tbsp butter
1 tbsp olive oil
1⃣Heat 1 tbsp butter in pan and add mushrooms. Sauté until soft and remove from heat
2⃣Heat second tbsp of butter and Add gnocchi with peas to pan and a little bit of water. Cover and cook for 5 mins or so until gnocchi are tender.
3⃣Add mushrooms back and quickly mix in beaten egg. Store quickly for a min until egg is cooked then drizzle olive oil over. Remove from heat.
Top with Parmesan cheese!
J ate a bit more at dinner than his other meals. Ate most of his bowl.
