Strawberry Watermelon Granita

My #instaweanteam dish for the week is strawberry and melon granita!

Granita is Italian shaved ice. It’s very delicious and refreshing. Usually granita has loads of sugar but I made a baby friendly sugar free version using watermelon juice.

1 pint strawberries, stems removed
2/3 cup watermelon juice

Note: You can make your own watermelon juice by putting fresh watermelon into a juicer. If you don’t have a juicer use a blender and strain it through a cheesecloth or mesh strainer.

1⃣Blend strawberries into a liquid puree.
2⃣Add watermelon juice and pour into a freezer safe container.
3⃣Put into the freezer and every half an hour gently stir, working from outside inwards, breaking up large chunks.
4⃣Repeat this until the mix is frozen into tiny shaved ice granules.

Not too hard at all and makes such a wonderfully yummy and healthy treat. You can try different fruits as well. A very popular one is lemon!
