Chickpea and Spinach Masala

I love cooking Indian food! So yummy! And lots of flavour 😋 1 large can chickpeas
1 bunch spinach
1 onion, chopped
1 clove garlic, minced
1 tomato, chopped
1 tbsp ginger
1/2 cup broth (veggie or chicken)
1 heaping tsp each cumin seeds, garam masala, paprika, ground coriander, turmeric and chaat masala (optional)
1 tbsp grape seed oil

1⃣Add cumin seeds to pan and toast a little.
2⃣Add onions, garlic, ginger and all the rest of the spices and sauté for about 5 mins.
3⃣Add chickpeas and and broth. Bring to boil then lower heat and simmer for about 10 mins until broth reduces.
4⃣Add spinach and mix in until it wilts. Serve.

J loved this! He ate almost his whole bowl I’d say about 3/4.
