Fiddlehead and potato hash

5 small potatoes, quarter
1 bunch fiddleheads
3 eggs, beaten
Seasoning (whatever you wish)

1⃣Wash and prepare fiddleheads (see my post from last week or visit my website and search fiddleheads)
2⃣Boil potatoes until fork tender. Throw in fiddleheads and cook for 10 mins.
3⃣Fry everything in a pan with butter adding seasonings. In the last few mins add in beaten eggs. Fry and mix until cooked.

J ate almost all the potatoes and eggs and a few fiddleheads. ✔️ok 6 months if no egg allergy in family.
