Fiddlehead, bacon and portobello mushroom pasta

Yum yum yum yummy 😍 I would have made this with portobello slices but my big baby (read husband) doesn’t like the look of mushrooms. 😔🍄🍄 1 package fiddleheads
4 slices bacon, chopped
2 portobello mushrooms, chopped or sliced
1 package pasta
1 garlic clove
1/4 cup Parmesan grated
1 tbsp butter

1⃣Wash and blanch fiddleheads. this is very important because raw unwashed fiddleheads can cause cause food poisoning. See my previous post for instructions.
2⃣ Boil water and cook pasta.
3⃣Meanwhile sauté bacon until cooked, add butter garlic and fiddleheads. Sauté for about 5 mins and add mushrooms. Sauté until soft and serve on pasta.

J ate the whole plate 😎….minus the fiddleheads lol 😓 ✔️ok 6 months but try to get nitrate free or low sodium bacon. For babies under a year be careful how much bacon you give because of salt. Portobello slices would also be easier to grab for younger tots.
