Sweet Potato Corn Fritter

Sweet potato, pea and corn fritters, meatball and grapes.

Js appetite was normal at lunch today so hopefully it will stick. It may be related to teething. He has his top 4 teeth coming in.

He ate everything yay plus more grapes. First time since Friday he has eaten his plate. ✔️ok for 6 months.

Fritter recipe
1 small sweet potato boiled and mashed
1/3 cup peas
1/3 cup corn
1 egg
Approx 1/2 cup Flour or corn meal (amount may vary see instructions below)

1⃣Mix all ingredients. Keep adding flour or cornmeal until mixture isn’t watery and bit thicker.
2⃣ refrigerate for 15-20 mins to let cornmeal or flour soak up moisture.
3⃣ Take a spoonful of the mix and putting into a hot frying pan. Spread it out with back of spoon so it makes a thin fritter shape. Fry over medium heat until browned then flip and again cook until browned.
If you find the fritters are too soft or breaking apart either add a bit more flour or try to make them thinner.
