Apple juice chicken, grapefruit roasted fennel and carrots, blackberries and pita.
I was skeptical of this chicken recipe but it turned out delicious. Just 2 ingredients chicken and apple cider.
2 cups Apple cider
6 chicken thighs.
1⃣Bring Apple cider to boil in pan.
2⃣Add chicken and cover about 20 mins.
3⃣Uncover, flip chicken and let apple cider boil down until it’s a thick sauce. Occasionally spoon sauce over chicken.
Grapefruit Roasted Fennel/carrots
1 grapefruit, zested and juiced
3 carrots, cut into large sticks
1 fennel, cut into wedges
3 shallots or 1 small red onion
2 tbsp italian seasoning
1 tsp brown sugar (optional)
1 tbsp flour
1⃣ Coat fennel, carrots and shallots in oil, zest and seasoning. Put in oven proof dish covered.
2⃣Bake covered 30 mins. Then uncover and continue to bake another 30 mins.
3⃣meanwhile heat a touch of oil in small pan and add flour and sugar. Stir one min. Add grapefruit juice and stir until thick.
4⃣ stir sauce into fennel and bake another 5 mins.
J ate half the chicken, a couple bites of carrot/fennel, all the pita and all the blackberries. ✔️️ok from 6 months.
