Shirataki Vegetable Stirfry

Very quick stir fry for dinner.

I found these shirataki noodles at the store (made from yams and are gfree) so decided to try them. They also don’t need cooking. They are ready to go 😄They were very yummy ❤️ kinda like glass noodles.

1 pack shirataki (or other asian) noodle (note – if using other noodles you will have to precook them)

1 cup edamame beans

1 zucchini cut into sticks

2 small carrots cut into thin strips

¼ cup soy sauce

1 tbsp fish sauce

2 tbsp mirin or rice vinegar

1 tbsp sesame oil

1⃣In a wok combine soy sauce, mirin and fish sauce and bring to a boil. Set aside in a bowl.

2⃣Add sesame oil to wok and heat. Add carrots, zucchini and edamame. Stir fry for 5 mins until tender but not soggy. Set aside.

3⃣Re-add sauce and add noodles. Let noodle soak up and cook in sauce for a few mins. Add veggies back in and heat through.

J loved the edamame and are a bunch. He also liked the noodles and carrots. He hasn’t been into zucchini lately so he left those. The pic is of my plate he ate off it tonight. ✔️ok 6 months.
