Asian Chicken Lettuce Cups

Really easy and quick to make.

4 chicken thighs

2 tbsp low sodium soy sauce

2 tbsp mirin (sweet rice vinegar)

2 tbsp ginger, minced

1 clove garlic, minced

3 green onions, cut into large pieces

Korean red pepper paste or siracha sauce to taste (optional)

1⃣Slice chicken into thin strips

2⃣Mix all ingredients in bowl and let chicken marinate about ½ hr

3⃣Heat a grill or grill pan very hot, dump in all chicken and marinade into single layer. Do not touch. Let cook 3-4 mins without stirring so chicken can char.

4⃣mix chicken and allow it to finish cooking.

J ate the chicken and rice plus more chicken and rice but not the lettuce. He also ate all the melon.
