Slow Cooker Pulled Pork Stuffed Sweet Potatoes with Mustard BBQ Sauce.
I can’t fit the BBQ sauce recipe into the post. It gets too long so I will post it separately. If you wish you can use an alternative BBQ sauce.
2lbs pork loin roast
3 sweet potatoes
1 onion, quartered
1 tomato, cut in large chunks
1 cup beef broth
1/4cup + 1tbsp Worcestershire sauce
¼ apple cider vinegar
¼ cup soy sauce
2 tbsp sweet paprika
½ tbsp cumin
½ tbsp garlic powder
1 tbsp mustard powder
1⃣ Put onion and broth, Soy sauce, vinegar and 1 cup Worcestershire sauce in bottom of slow cooker.
2⃣ Mix all the spices with 1tbsp Worcestershire sauce and make a paste. Rub paste over pork loin. Place pork in slow cooker.
3⃣ Set on low for 8 hours.
4⃣With 1 hour left heat over to 400. Lightly oil potatoes and put in a baking dish on top of foil. Bake until fork tender – approx 45 mins.
5⃣When pork is done remove onto chopping board and shred with two forks. Return to slow cooker for 10 mins to marinate in liquid.
6⃣Slice sweet potatoes lengthwise and fill with pulled pork. Drizzle with mustard BBQ sauce.
