Sweet Potato Crust Quiche

Lunch was leftovers from yesterday! As promised here is quiche recipe ❤️

2 medium sweet potatoes

¼ cup flour (any type)

8 large eggs

Any filling you may wish (I made some with peas)

Oil for greasing

1⃣ Boil sweet potatoes until fork tender. Mash with flour until well mixed.

2⃣Grease muffin tin and spoon some sweet potato into each tin press down and form crust.

3⃣Bake crusts at 400 for 10 mins.

4⃣Remove tray from oven and pour egg over top each crust. Add in any topping as well. Do not over fill because they will expand.

5⃣Bake until egg is set about 15-20 mins.

I am really not a huge quiche fan and I LOVED these!! The sweet potato tasted so good ❤️❤️❤️
