Roasted Red Pepper Dip

Roasted Red Pepper Dip

Great for dipping for baby or to spread on toast and crackers. Or even inside a grilled cheese!

2 bell peppers

½ cup cottage cheese (you could use Greek yogurt or sour cream)

2 cloves garlic

1 tbsp olive oil

1 tbsp balsamic vinegar

1 tsp dried oregano

1⃣ Roast your peppers (BBQ, stovetop over gas flame or oven works). If using bbq or gas flame try to get the skin as charred as possible.

2⃣Let peppers cool then peel and deseed. Charred black skin with peel easily.

3⃣Blend all ingredients.
