Chicken and Chickpea Curry

Sorry for the late post again. We were out visiting grandad and grandma tonight and just got back! They live quite a bit further than nonno and nonna do lol!

I served this with the make your own grilled cheese last night. It came out so good!! I was really happy with it.

3 chicken breasts, cubed

1 onion chopped

1 bunch Swiss chard

1 can chickpeas

1 can coconut milk (I find using high quality coconut milk makes a huge difference)

2 tbsp curry powder

1 tsp cumin seeds

1 tsp ground ginger

1.5 tsp turmeric

1.5 tsp garam masala

3 cardamom pods

2 tbsp coconut oil

Cooked rice to serve on.

A note about the spices. I didn’t measure them exactly I just kids shook some in so you might have to tweak the measurements a bit. You can find most of these in he spice aisle at the grocery (you might have to go to an Indian grocer for the garam masala)

1⃣Heat coconut oil in pan and cook chicken until outsides are browned.

2⃣Add onion and cook until softened.

3⃣Add all spices, coconut milk. Fill coconut milk can with water and add that as well.

4⃣Stir together and bring to a boil, allow curry to simmer and thicken a bit.

5⃣Add chick peas and Swiss chard. Continue simmering until chard has wilted and chickpeas are heated through.

6⃣serve on rice!
