Spiralized Beet Pasta with Lemon Sauce

Spiralized Zucchini and Beet Pasta with Meyer Lemon Sauce
This recipe sounds a lot fancier than it is lol! You can make anything sound fancy by giving it a long descriptive name haha. And it’s super quick! You do need a spiralizer though.

I found these cool Meyer lemons at the store and wanted to try them. They are smaller and a bit sweeter than a normal lemon.

2 zucchinis

3-4 beets depending on size

1 Meyer lemon or normal lemon, juiced and zested

¼ cup + 1 tbsp Olive oil

1 clove garlic, minced

1 tbsp cream (optional)

1⃣Boil beets, peel and spiralize

2⃣Spiralize zucchini

3⃣heat tbsp oil in pan and saute zucchini until tender. To make them softer for baby it added a few tbsp of water and covered with a lid for a few mins to steam it)

4⃣Add beets, and all other ingredients to pan. Heat through and stir for a min. Serve.

I served it with tortilla triangles topped with yogurt that had been mixed with some lemon zest and a bit of juice. I wouldn’t do this with a regular lemon though cause might be a bit too sour.

We stripped J to his diaper for this one. He made a royal mess but ate the whole plate plus half a banana.
