Kidney Bean ratatouille
This was supposed to be mix bean Ratatouille but I accidentally used my last can of mixed beans on the weekend to make a bean salad.
This is my riff on my Nonna’s secret recipe (I just added eggplant and beans lol). J loooooved it. He ate two whole bowls. I’m going to post a video I made of him eating soon.
Kidney bean ratatouille
– 1 zucchini
– 1 onion
– 1 can of beans
– 3 ripe tomatoes (the juicier the better : if your tomatoes aren’t ripe you could add some water or use a can of chopped tomatoes)
– 1 or 2 cloves garlic
– ¼ cup olive oil
1⃣Chop all veggies into large chunks
2⃣Heat a large skillet with oil and toss in all veggies. Mix around
3⃣cover pan with lid and every few mins stir up the veggies. If pan is getting too dry put a bit of water in it.
4⃣when veggies are soft and slightly mushy add beans and heat through.
