Pot Roast

Slow cooker pot roast with veggies and lemon garlic romanesco. Served with puff pastry pinwheels (which I will post about tomorrow) and melon.

You can make recipe as is for baby. Just don’t salt water or use tiny amount.

Pot Roast

2-4 lb pot roast (I used a chuck roast)

Veggies quartered – I used onions, potatoes, carrots and celery

-¾ cup water or beef broth

1⃣put all ingredients in slow cooker and set on low for 8 hrs or 3hrs low and 3 hrs high.

The romanesco was surprisingly a bigger hit than the beef. I think he liked chewing on it cause he is teething.
