I usually make pancakes on the weekends and when I asked hubby what kind he wanted he said banana…again for like the third or fourth time in a row. I wanted to try something new and creative so I made these instead lol. They aren’t hard and tasty yummy! The cottage cheese really helps the flavour pop. J ate 4!
1⃣ Make pancake batter however you normally make it – can be from scratch or a mix. We use Pamela’s gfree pancake batter.
2⃣ Add zest and juice of 1 lemon. If you want extra lemony add another or a couple drops of natural lemon extract.
3⃣Add in 3tbsp poppy seed.
4⃣ Whisk everything into batter smoothly and make those pancakes!
