Amaranth Cookies

Popped Amaranth Cookies!

Found this awesome recipe by @dobrze for three ingredient cookies. So amazingly simply and sooooo tasty. My hubby kept trying to steal them all. We only have like 3 left.

I made two varieties. One is the original recipe from @dobrze which is as follows

-2 cups popped amaranth

– 2 mashed bananas

– ½ cup shredded coconut.

1⃣Mix all ingredients in bowl and shape into cookies.

2⃣Bake at 350 for 10 mins on parchment paper.

It’s seriously that easy. I had to learn how to pop amaranth so I will post a video in a bit to show you. It’s super easy to do.

The other cookies are made the same way but I used a spinach,mango, pear purée instead of the banana and chopped strawberries instead of coconut. I did it just to see if different combos would work. They came out great but def not as sweet as the other ones. You can taste the spinach so hubs didn’t want those 😹.

Anyways you could pretty much make any combo you want using a purée and then a chopped or shredded additional ingredient!
