Muffins on Pancake Tues? Has this world gone mad? Don’t worry obligatory pancake pic is coming later lol.

Ok so these muffins. I never bake because of my hubby’s celiac disease and Gfree baking can be very hit and miss unless you really know what you are doing. So now that J is here I actually have a chance to bake something glutinous. We have to have him tested Ina few weeks for celiac so he has to be ingesting gluten for the test to work.

I more or less made this up after looking at a base muffin recipe and trying to make it baby friendly instead so I swapped out like half the ingredients and just prayed lol. They ended up ok and I was “berry surprised” so hence the name lol. Also they have surprise berry filling.

– 1.5 cups flour ( you could try this gfree if you want)

– 1 cup finely chopped strawberries (protip – pulse in blender)

– 2/3 cup flax seed

-2.5 tsp baking powder

– 2 tsp cinnamon

-pinch of salt (optional)

– ¾ cup kefir or drinkable yogurt (plain or any berry flavour. I used blueberry)

– 1 egg

-¼ cup butter soft or melted

– ½ cup #blgbabyjam

1⃣Fill muffin tray with liners or oil muffin tray well.

2⃣Mix all ingredients EXCEPT JAM in a bowl until dough is moistened throughout with consistent texture. If too dry add more kefir.

3⃣put a spoonful of batter into each muffin tin. Then put a small spoon of jam on top. Then put another spoonful of batter.

4⃣bake at 400 for 20 mins

A tips -let them cool before trying to remove liners or they stick a lot.

I found the muffins very plain for my taste without any sugar/salt but J loved them and they are healthy!
