Banana oatmeal fingers, steamed broccoli and tofu.

Busy morning! We went to a mommy and baby group class so I had to premake J’s lunch. I steamed the broccoli the other day when I made the onigiri and just put some aside. Tofu is also left over.

I very rarely cook things without a recipe but I thought I’d give it a shot this morning. I saw a few ideas for oatmeal fingers around and decided to do my own take on them because a lot of them use milk – either cow or nut – and J is under 1 so we have decided not to do nuts for now and he can’t have pure milk yet.

1 banana
¾ cup oats ( or more if you want it thicker)
½ cup prune juice or other juice
½ water
2 tbsp yogurt

1⃣mash banana
2⃣add all other ingredients to banana and mix. Adjust to consistency you desire.
3⃣Microwave about 2.5 mins (might differ based on consistency and microwave)
4⃣Spread out with knife until you get a square shape about an inch thick.
5⃣allow to cool and then slice into fingers.

It was super easy and fast!! Took like 5-10 mins.

J seemed to like them but he hasn’t been in an eating mood today. Although he had a great convo with his broccoli.
